Black truffle origin and truffle season

This truffle it is known as Perigord Truffle because at the beggining of twentieth century France was the main producer in the world. Nowadays 90% of the production of this truffle mushoom it is produced in Spain in winter time. From November to April Spanish truffle it is sold around the world.

Once the winter season it is finished in Europe, from May to August we find from Southern Hemisphere Australian truffle and South American truffle.

Quality and servings of black truffle

At Laumont we offer different types of black truffle, depending on their shape and quality:

Extra black truffle: 95% of the skin rind without imperfections and regular shape. It is used in the best restaurants in the world due to its quality and its perfect appearance.

First quality: irregular shape and 80% of the skin without imperfections. A very good quality truffle with a good aroma but a shape not as delicate as the extra one.

Chunk quality: split truffles that only a part can be marketed fresh. Ideal for those who use the truffle regardless of its appearance.

Small truffle: specimens of 8 to 20 grams. These smaller truffles have the same characteristics as the larger pieces, but their volume limits their culinary use depending on what you want to cook.

Black truffle price

The price of black truffle is very volatile. At the moment of maximum value, it can exceed € 600 per kg. In summary, the variation in the price of truffles has these phases:

15 November - 15 December: Average maturation - low price

15 December - 25 December: Average/high maturation - high price

25 December - 31 January: High maturation - low price

1 February - April: High maturation - Average price

The truffle from Australia or Chile it usually comes at a slightly higher price than the winter campaign in Spain. Likewise, the quality and aroma are equal or even better than our domestic production.
