Langres was declared AOC in 1991 and then AOP in 2012. Langres AOP Germain is a soft cheese with a washed rind, made from cow's milk. It is matured using a very demanding method of successive "rubbing" which gives it its beautiful orange color. This cheese gives off a penetrating, intense and typical smell that leaves a pleasant but not overpowering taste. The Langres AOP Germain is the leader of Langres in the world.
